Tangy Cheese & Spinach Quiche


Ingredients and Directions:

6 eggs, whipped

3/4 cup heavy whipping cream

1 tsp Dijon mustard 

2 tbsp chopped fresh chives

1/4 tsp salt

1/2 tsp smoked paprika 

1/2 tsp ground nutmeg

1/4 cup grated parmesan cheese

2 cups shredded cheddar cheese

1 cup baby spinach

1 tbsp butter 

Preheat oven to 350°. In a baking dish, place 1 tbsp butter and melt in oven. While butter is melting, in a bowl whisk together eggs, heavy whipping cream, mustard, paprika, nutmeg and salt until fully incorporated. Fold in chopped chives and parmesan cheese. Remove baking dish from oven and make sure the butter evenly coats the bottom of dish as well as the sides. Then place 1 cup spinach at base. Evenly pour the mixture over spinach. Place the 2 cups cheddar over top. Bake at 350° for 45-55 minutes or until center is cooked. 

Evenly slice into 6 slices.
