Ingredients and Directions:
2 cups almond flour
6 tbsp coconut flour
3/4 cup oat fiber (you can do 3/4 almond flour but you'll need 1 tsp xanthan gum to help stabilize cookie)
1/2 tsp salt
1 tsp baking soda
2 large room temp eggs
2 cups butter
1 tbsp strawberry extract
1/2 cup granulated monkfruit
1/2 cup Lily's semi sweet chocolate chips plus 1/8 cup to top cookies
2 large strawberries, sliced and chopped
1 scoop TeamKeto Vanilla c8
1 scoop TeamKeto Unflavored Collagen
In a bowl, cream butter and monkfruit, then add eggs and strawberry extract. Slowly add in dry ingredients and 1/2 cup chocolate chips. Evenly form 25 cookie balls and place on parchment-lined baking sheet. You'll need to flatten with hand since the do not spread. Evenly distribute chopped strawberries between all 25 cookies make sure to press down in dough. Evenly distribute 1/8 cup chocolate chips over tops of cookies. Place in oven at 350° for 13 minutes or until golden brown.
