Frozen Mint Brownie Chocolate Chip Fluff
Ingredients and Directions:
8oz softened cream cheese
2 cups heavy whipping cream
1/4 cup granulated sweetener
1 1/2 tsp peppermint extract
1/3 cup chocolate chips
A few drops of green food coloring (optional)

In one bowl, add cream cheese and sweetener using a hand mixer or stand mixer until fluffy. Once fluffy, fold in chocolate chips. In a separate bowl, add heavy whipping cream and extract (and food coloring if using). Whip until you have stiff peaks. Gently fold in whipped cream to fluffy cream cheese and chocolate chip mixture. Once fully incorporated, evenly portion into 4 separate servings. Chop up each brownie bar and add 1 chopped bar to each serving. This can be done once you are ready to eat it. Place in freezer for 30-45 minutes and enjoy!
