Ingredients and Directions:
1 1/2 cups almond flour
1/4 cup oat fiber
1/3 cup cocoa powder
1 tsp baking powder
1 scoop TeamKeto Chocolate Hazelnut c8
1 scoop TeamKeto Chocolate Collagen
1/4 tsp salt
1/4 cup monkfruit
2 tsp peppermint extract
3 1/2 tbsp melted butter
Note: if you don't have oat fiber you can just use 1/4 cup almond flour.
In a bowl, mix all dry ingredients. Add in melted butter (make sure it is not hot, just melted), mint extract, and egg. You are going to have to use your hands to compress dough.
In between two pieces of parchment paper, place dough and roll out dough to about 1/4 to a 1/2 inch. Cut out the cookies with 2-inch circle cookie cutter and place on a parchment-lined baking sheet. Continue process until all dough is used. Bake for 24 mins at 300°.
1/2 cup butter
4oz Lilly's chocolate chips
1 tsp peppermint extract
Melt and mix ingredients until well-combined. Working quickly, dip cookies and evenly coat. Place of a baking sheet. Once completed chill in fridge for 30 mins until chocolate hardens.
Makes 50 cookies
