Cheddar Bacon Muffins / Biscuits
Ingredients and Directions:
1 1/2 cups almond flour
1/2 cup oat fiber (if you don't have oat fiber then add another 1/2 cup almond flour)
2 tsp baking powder
1/2 tsp salt
1/2 tsp garlic powder
1/2 cup heavy whipping cream, room temp
2 eggs, room temp
1/4 cup melted butter (warm not hot)
2 tbsp chopped chives (fresh or dried)
8 slices of cooked bacon, crumbled
1 cup shredded cheddar cheese
Optional: 1 scoop TeamKeto unflavored c8
In a bowl, mix all dry ingredients. In a separate bowl, whisk together heavy whipping cream, eggs, and butter. Make sure butter is not hot or it will cook the eggs. Once mixed, slowly add in dry ingredients. It will be a thick. Once done, fold in chives, bacon, and shredded cheddar.
In a greased muffin pan (I used bacon fat but you can use butter), scoop 3 tbsp of batter into each compartment. Bake at 350° for 24-26 minutes until golden brown. Serve hot.
