Lemon Poppy Seed Chaffles

Ingredients and Directions:

2 large eggs

1/2 cup full fat ricotta 

1/4 cup almond flour 

1/8 cup oat fiber

1/2 tsp lemon zest

1/2 tsp poppy seeds 

2 tbsp monkfruit sweetener

1 tsp lemon extract

1/2 tsp vanilla 

1 tbsp butter for waffle iron 

Optional: 1 scoop vanilla c8 (not calculated)


In a bowl, add all dry ingredients and mix. Then add in ricotta, eggs and extracts until smooth batter forms. Using a mini waffle maker, butter iron so waffle does not stick. Place about 1/4 cup of batter in iron.  


Icing:

1 1/2 tbsp lemon juice

2 tbsp powdered monkfruit sweetener


In a bowl, add ingredients, mix until well combined. Drizzle over waffles.

Makes 5 mini chaffles

Macros per serving: 135 cal, 10g fat, 6g protein, 3g net carbs
