Strawberries and Cream Biscuits
Directions and Ingredients:
Biscuits:
1 1/4 cup almond flour
1/4 cup oat fiber
1/4 cup coconut flour
2 tsp baking powder
1/3 granulated sweetener
1/4 tsp salt
4oz softened cream cheese
2 large egg, room temp
3 tbsp heavy whipping cream
1/2 tsp vanilla
Optional: 1/2 tsp strawberry extract
5.4 oz chopped strawberries
1/4 cup white chocolate chips
Optional: 1 scoop strawberries and cream collagen (not calculated)
In a bowl, add all dry ingredients and mix. Then add in cream cheese and with a fork, cut into dry ingredients until crumbly. In a separate bowl whisk eggs, heavy whipping cream and extract. Add into crumble mixture. Once combined, add in strawberries and white chocolate chips. Preheat oven to 325°. Using a 3 tbsp scooper, scoop 12 equal sized scoops onto a parchment-lined baking sheet. Place in fridge for 25 minutes. Remove from fridge and press down on batter to flatten. Place in oven for 25-35 minutes until golden brown.
Topping:
1/4 cup white chocolate chips melted and drizzled on top.
Allow to cool before drizzle, place in fridge to harden. Enjoy!
