2 cups mozzarella
1 cup almond flour
1 tsp xanthan gum
1/4 tsp salt
Optional - 1/2 tsp corn flavored extract (Don't worry, it's keto-approved! Try the Amoretti brand!) to get the corn tortilla flavor
In a microwaveable bowl add all ingredients except the extract.
Cover with plastic wrap and microwave for 1 minute combine and microwave for 35 more seconds. At this point if you are adding the extract then add it and fold until well combined.
Make even 9 1oz balls, I used a tortilla press to make them. You can roll them out. Now you can either cook all of them for that day and keep in fridge for 3 days or you can place them in wax paper and in a zip lock bag and place them in the freezer for about a week.
Cook on a Comal or non stick pan until done. To re heat do the same. They are to be eaten hot and fresh. If left out for a while they will harden. If you microwave to re heat they harden quicker.
For chips just cut into bite size triangles and pan fry in ½ tbsp avocado oil.
Makes 9 1oz tortillas (1 serving is 1 tortilla)
Macros per serving: fat -11.73g, protein - 8.17g, net carbs - 1.86g
