For the tortilla:
All you need is a non stick pan and 1/2 tbsp avocado oil and fry up both sides until crispy (tortilla recipe in blog).
For the Huevos Rancheros:
1 over-easy or sunny side up egg
1/8 cheddar cheese
1 tbsp salsa
Here is a yummy salsa recipe!
(You can adjust it to your preference as well)
1/2 of a tomato, preferably one of the beef tomatoes
1/8 cup chopped cilantro stems and all
2-3 cloves of garlic
1/4 cup chopped Serrano or jalapeño pepper
1/4 cup chopped onion
1/2 tbsp avocado oil
1/4 cup water
Saute the chile pepper and onion until translucent (or slightly charred for flavor), then add garlic. Cook until fragrant, then add in tomatoes and cilantro. Add in 1/4 cup water and salt to taste. Now you can mash the salsa with a fork or blend it in a food processor. Enjoy!
