Keto Crack Chicken Salad
Ingredients (one serving):
2 oz Rotisserie Chicken (56.7 grams)
1/16 small raw Red Onion (2.9 grams)
2/3 stalk, medium (7-1/2" - 8" long) Celery (26.7 grams)
13/16 medium (3/4" to 1" dia) Radishes (3.7 grams)
3/16 head Lettuce (104 grams)
3/16 tsp Garlic powder (0.52 grams)
1 1/3 oz Olive Oil Mayonaise (37.8 grams)
Directions (six servings):
1. Shred your chicken into bite size pieces. Finely dice red onion. Slice celery and cut radishes into ribbons. Different sizes in the veggies are what make this dish as it adds a variety of texture and crunch.
2. Toss veggies into bowl with chicken and add mayo and garlic powder. Salt and pepper to taste. Mix so its evenly coated.
3. Pull leaves apart on romaine and wash. To assemble scoop 3/4 cup chicken mixture on to lettuce leaf. 1 serving is 2 filled leaves. Makes 6 servings.
