Eggnog 90-Second Mug Cake

Ingredients and Directions:

 

Eggnog mug cake-


1 large egg

1/4 cup heavy whipping cream 

2 tbsp melted butter

2 1/2 tsp rum extract

⅛ tsp nutmeg 

1 tsp baking powder

1/4 tsp cinnamon 

2tbsp almond flour

1 tbsp coconut flour

1 scoop TeamKeto Vanilla Meal Replacement 

1 tbsp powdered monkfruit 


In a microwaveable cup or bowl, mix all ingredients until cake like batter forms. Microwave for 90 seconds. 


Topping:

1/4 cup heavy whipping cream

Sweetener to taste

Dash of cinnamon 


In a bowl, whip whipping cream and sweetener. Scoop on top of mug cake and sprinkle cinnamon on top. Enjoy!
