Ingredients and Directions:
1/3 cup oat fiber (or 2 tbsp coconut flour)
1/3 cup almond flour
1 1/2 tsp baking powder
1/4 tsp salt
4 oz butter, room temp
3/4 cup golden monkfruit
4 oz cream cheese, room temp
3 eggs room temp
1/3 cup sour cream room temp
2 1/2 tsp banana extract
3/4 cup keto-approved chocolate chips (Lily's is a great option!)
In a bowl, mix all dry ingredients minus monkfruit and set aside. In a separate bowl using a mixer cream butter and monkfruit until fluffy and light in color. Then add cream cheese. Once combined, add eggs. Lastly add in sour cream and extract. Slowly incorporate dry ingredients. Fold in about half of the chocolate chips leaving some to top muffins with.
I used a muffin top pan but you can use a regular cupcake pan or mini muffin pan. Place in oven 350 for about 26 mins until golden.
Makes 16 muffins tops or mini muffins
