Blueberry Sheet Pancakes
Ingredients and Directions:
1tbsp white vinegar
3/4 cup heavy whipping cream
1 cup almond flour
1/2 cup oat fiber or 3 tbsp coconut flour
1/4 tsp salt
1/2 tsp baking powder
1 scoop TeamKeto Vanilla c8
1/3 cup granulated monkfruit
3 large eggs beaten
2 tbsp melted butter
1 tsp vanilla
4 drops vanilla liquid sweetener
1/2 cup fresh blueberries
In a bowl, mix vinegar and heavy whipping cream and set aside. In another bowl, add all dry ingredients then add whisked eggs, vanilla, butter, and monkfruit. Add in vinegar and heavy whipping cream. Once fully incorporated, on a parchment-lined baking sheet evenly spread out pancake batter, about 1 inch thick (or if you want it thiner that's fine). Once the batter is spread out, evenly distribute blueberries and gently push into batter. Place in oven at 350° for about 26 minutes until lightly golden.
