Baked Keto Apple Cinnamon "Oatmeal"

Ingredients and Directions:


4tbs salted butter

1 cup diced chyote or zucchini 

12 tbsp heavy whipping cream 

1 tsp apple extract (we use oooflavors Granny apple extract)

1 tsp mapleine extract 

1 tsp vanilla 

1/2 tsp cinnamon 

1 tsp apple pie spice 

1/4 cup brown monkfruit (the pink bag)

1 cup hemp hearts

1/4 cup oat fiber

1 scoop TeamKeto Salted Caramel Collagen

In a sauce pan on medium heat add butter. Once melted add chyote or zucchini and brown sugar. Allow to simmer until tender make sure to stir so that butter and sugar do not burn. Then add in extracts: apple, mapleine and vanilla. Stir in heavy whipping cream, then stir in hemp hearts oat fiber and collagen.

Preheat oven to 350°. Using a baking sheet, place four 4oz ramekins on it. Evenly distribute oatmeal between each one. 

Praline topping:

1/2 cup chopped pecans

1/4 tsp salt

1/2 tsp cinnamon 

1/8 cup brown monkfruit 

1/8 cup oat fiber

2 tbsp unsalted butter 

In a small pan lightly toast pecans, sprinkle on salt. Add butter once melted add in remaining ingredients and stir until well-combined. Evenly distribute between all four ramekins.

Place in oven to 350° 25 minutes. Allow it to cool for 10 minutes.
