Cinnamon Sugar Pretzel Bites

Ingredients and Directions:

-1 ¼ cup Almond flour

-¼ cup Oat fiber (Can sup more coconut Flour or just more almond flour)

-1 Tablespoon dry active yeast (for pretzel flavor) about 4 packets

- 2 Tablespoons Brown sweetener or regular granulated sweetener

- 1 Tablespoon Baking powder

(optional: 1 scoop unflavored C8, not calculated)

-2 Eggs (one for dough, one for egg wash)

-2 Tablespoons Cream cheese

-2 cups of shredded Mozzarella

*if dough is sticky, add in 1 tbsp of almond flour at a time until no longer sticky*


*Cinnamon sugar covering:

5 tbs butter

2 Tbs Cinnamon

¼ cup Granulated sweetener


Preheat oven to 400°. In a bowl, add in Almond flour, Oat fiber, Yeast, baking powder and Sweetener. Mix until well-combined. In a separate microwaveable bowl, add mozzarella, cream cheese. Microwave for 30 seconds at a time until melted.

Fold in egg/flour/yeast mixture until well-combined. Again, dough should not be sticky, add in a tbsp of almond flour at a time until it is not sticky. Cut dough into 4 even sized portions. Each one roll put into a 6-inch rectangle and about ½ inch thick. Evenly cut 40 pieces from all of dough. Place on a parchment-lined baking sheet. Whisk the remaining egg in a bowl and using a pastry brush, brush on Egg wash over all pieces.

Bake at 400 for 12-13 minutes or until golden brown. Mid way, turn pan to evenly brown. While pretzels are baking, melt butter in a bowl. In another add cinnamon and sugar and mix. Once pretzels are out, allow to cool slightly before handling. Roll each piece in butter the cinnamon sugar mixture. Do this until all are coated. Serve warm.
