Caramel Apple Pie Rolls
Caramel ingredients and instructions:
8 tbsp butter
5 tbsp brown monkfruit
1 cup heavy cream
1 tsp vanilla
1 scoop TeamKeto Salted Caramel Collagen
1/4 tsp xanthan gum
Makes 18 tbs (you're only going to be using 7 tbs)
In a sauce pan on medium heat melt butter and monkfruit. Allow to simmer for 3-4 minutes, stirring occasionally so it does not burn. Add vanilla and heavy whipping cream. Cook for another 8-10 minutes until golden brown and slightly thickened. Add collagen and mix to combine, then add in xanthan gum. Cook for another 3-4 minutes on low until thickens.
Filling ingredients and instructions:
1 1/4-1 1/2 cups of peeled, seeded, and diced chayote
1/2 tbsp lemon juice
1 tsp cinnamon
1/2 cup brown monkfruit
2/16 tsp xanthan gum
40 drops oooflavors Granny Smith apple flavoring
Also you'll need 2 tbsp softened butter to spread on dough.
Peel, de-seed and dice chayote and add to a bowl add cinnamon 1/4 cup brown monkfruit and lemon juice. Allow to sit for about 5 minutes. In a sauce pan add all ingredients and simmer on medium to low heat. Once it starts to bubble add in remaining 1/4 cup of monkfruit stir and lastly add in apple flavoring. Allow to simmer once chayote is fork tender and in 2/16 tsp of xanthan gum and stir until thickened.
Dough ingredients and instructions:
3 cups shredded mozzarella
2 oz cream cheese
2 cups almond flour
2 tbsp original monkfruit
1 tbsp baking powder
1 scoop vanilla c8
Optional: 1 Scoop TeamKeto Unflavored Collagen
In a microwaveable bowl, add shredded cheese and cream cheese. Cover with plastic wrap microwave for 1 minute and an additional 30 if needed.
Using a food processor add in melted cheese mixture and add in all dry ingredients. Mix until a smooth dough forms.
Place dough onto parchment paper and cover with another on top roll out dough to rectangle shape. Cut off uneven edges and re work them until even rectangle forms. Spread 2 tbsp of butter evenly. Top with "apple pie" filling and evenly spread out.
Slowly and tightly roll dough using the parchment paper.
Once roll is formed, cut 1 inch to 1 1/2 inch rolls - this will make 13 rolls. You can either place them in greased cupcake tin or a circular cake pan. Bake at 350°, up to 25 minutes until tops are golden brown.
Add 1/2 tbsp of caramel sauce to each roll. Serve warm!
