Keto Zucchini Pizza Bites Recipe

Pizza is a family favorite and it is definitely missed if you are following a keto diet. Just because you’re on a keto diet doesn’t mean you have to totally give up all of your favorite foods. It just means you might have to get a little creative and be open to trying a different version of a traditional recipe.

When it comes to making pizza keto there are a lot of options. The main source of carbs is the crust, the other toppings, like tomato sauce, meat, or veggies are all ok on keto. So, there are a few options to handling the crust. You could choose a low-carb crust or you could swap out the crust for something else altogether.

In this recipe we chose to use zucchini slices to create pizza “bites”. They’re full of flavor, use simple ingredients, and are easy to make. We are not saying this recipe tastes the same as pizza, but it does have a lot of the same flavors, so it might hit the spot if you are craving some ‘za.

These would be a great option to bring to a party. Everyone could enjoy a recipe like this, whether they are eating keto or not. It would also give you something to eat, in case there aren’t a lot of keto options being served.

Grocery List

Here are the ingredients needed for making Zucchini Pizza Bites:

  • 2 medium zucchinis
  • 1 cup mozzarella cheese
  • 20 sliced black olives
  • 20 slices of pepperoni sausage
  • 1 clove of garlic, minced
  • 2 Tbsp of olive oil

For the Keto Marinara Sauce:

Important: For our pizza bites, we only need 10 oz of keto marinara sauce. However our Marzano tomatoes come in 28 oz cans. So, plan on saving the extra marinara and partitioning your servings correctly!

  • 28 oz can Peeled San Marzano Tomatoes
  • ¼ tsp black pepper
  • ½ tsp red pepper flakes
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tsp Pink Himalayan salt
  • 2 Tbsp red wine vinegar
  • ¼ cup olive oil

Components

Your kitchen will require the following:

  • Cutting Board
  • Slicing Knife
  • Baking Sheet

Directions

For this recipe, you’re going to bake the zucchini slices, add the marinara and toppings, and then continue baking your mini zucchini pizzas.

Here are the complete cooking instructions:

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Cut up each zucchini into 10 slices and then place them on the baking sheet. Brush a little olive oil on each side.
  3. Place baking sheet in the oven or 2-3 minutes, just enough time for the zucchini to dry/golden up slightly.
  4. Spread 1 tsp Keto Marinara on each slice of zucchini.
  5. Top with cheese, olives, pepperoni, and garlic.
  6. Then stick back in the oven for 4-5 minutes, just enough time to melt the cheese.
  7. Serve and enjoy 10 slices with 1 Cheesy Keto biscuit or 1 serving of other side/snack recipe (macro table does not include keto biscuit).

Leftovers and Meal Prep

This recipe can be doubled or tripled during meal prep if you prefer to have leftovers for the next day or two.

To make this recipe even easier, you can slice the zucchini and prep any other toppings ahead of time, like the day before you make this recipe or the morning of. Or you can buy pre-sliced zucchini to speed up the process further.

You could also make a large pot of the Keto Marinara and freeze it in individual containers for later use. Keto marinara can be used for other dishes like zoodles. If you don’t want to make your own tomato sauce, look for a marinara sauce that does not have any sugar and is keto-friendly.

Don’t limit yourself to the toppings described above. If you want to add more veggies, consider slicing the zucchini lengthwise which would allow for more space. Add fresh tomato slices, goat cheese, and spinach for a more Mediterranean style pizza. Or make a “supreme” pizza by adding sausage, bell peppers, and mushrooms. If you don’t want to use zucchini, eggplant could also be a good alternative for the “crust”. Add bacon and blue cheese for a different twist.

This recipe can be as versatile as you want it to be. Zucchini is neutral enough to lend itself to a variety of preparation methods. You may not even miss traditional pizza after devouring this delicious option.
