This recipe packs just the right balance of fat and protein, while managing your carbohydrate intake. Not only that, it’s loaded with fiber thanks to the avocado. The combo is sure-fire win, with amazing flavor to keep you fully satisfied.

This recipe calls for full-fat cheese and you can use whichever kind you prefer. Try cheddar, mozzarella or even some spicy pepper jack - your taste buds will thank you! Just be sure it is full-fat. Avoid cheeses labeled skim or part-skim. Also it is best not to use pre-shredded cheese which sometimes has added carbohydrates.

Try to choose a bacon that is sugar-free. Like salt, sugar is often used in the curing process of meats, including bacon. Sugar is used to add flavor, balance some of the salt content and help prevent the growth of bacteria. There are however several brands on the market that offer sugar-free options, you just need to look for one.

A quick tip: be sure to use a ripe avocado for maximum flavor. The perfect avocado will yield to firm, gentle pressure. It should feel soft, but not mushy when you give it a little squeeze. Choosing an avocado that is not yet ripe or overripe will affect the overall flavor and quality of this dish, so make sure you get it while it’s good!

Here are the ingredients needed for keto stuffed avocado eggs

  • 1 medium avocado
  • 2 large eggs
  • 2 pieces of cooked bacon, crumbled
  • ¼ cup full-fat, shredded cheese (any variety)
  • Pinch of salt

Components:

Your kitchen will require the following

  • Cutting board
  • Muffin pan
  • Sharp knife

Directions:

  1. Preheat the oven to 420 F.
  2. While the oven is heating, use your hands or a knife to crumble the 2 pieces of cooked bacon.
  3. Next, cut the avocado in half and remove the pit from the center.
  4. Using a spoon, remove just enough avocado from each half to make a hole large enough for the egg yolk to fit in it. Place each half in a muffin pan, skin side down, to keep the avocado stable while cooking.(You don’t want the avocado to fall over once the egg is placed in it).
  5. Next, crack one egg into the hole of each half of the avocado. Aim to have the yolk centered in the hole.
  6. After adding the egg, sprinkle ⅛ cup of cheese, ½ of the crumbled bacon and a pinch of salt onto each egg and avocado half.
  7. Cook the stuffed avocado for about 14-16 minutes or until egg is at your desired doneness.
  8. Serve with a one of our keto approved sides and enjoy!

Leftovers and Meal Prep

While the above recipe serves two, there’s no reason you couldn’t double or triple it to have more on hand for those busy weekday mornings. Because avocados tend to go bad quickly, this recipe will only last in the fridge for a few days.

To prep ahead and save a little time, consider cooking and chopping the bacon ahead of time and storing it in the fridge.

Pro tip: cook the bacon in the oven! Yes, oven-cooked bacon is amazing. To prepare, place the uncooked strips next to each other in a single layer on a sheet pan lined with parchment paper. Place in the oven at 400 degrees for approximately 15 minutes or until bacon is at desired doneness. Once cool, crumble or chop each strip using your hands or a knife.. Chopped bacon is always a keto friendly garnish to have on hand and can be used with several of our other recipes! If you are going to double the recipe, you could also portion out the ⅛ cup of cheese ahead of time and store in a Ziploc bag or container.

Additional Comments: To add even more calories from fat to this meal, top the stuffed avocado eggs with some full-fat sour cream or ranch dressing and enjoy!
