Summer Zucchini quiche

 

Ingredients and Directions:

8 large eggs

1/4 cup heavy whipping cream 

1/2 tsp ground turmeric

1/2 tsp black pepper

1/2 tsp smoked paprika 

1/2 tsp sea salt

1/8 tsp garlic powder

1 tsp red pepper flakes 

1/4 yellow bell pepper, chopped

1/4 red onion, thinly sliced

1/2 medium zucchini, thinly sliced 

3.5 oz spinach 

1/4 cup shredded cheddar cheese 

1/4 cup shredded Parmesan cheese

1/4 cup shredded Asiago cheese

1 tbsp butter

Optional: if you wanted to up the fat content you could add in TeamKeto Unflavored C8 Powder if you would like. 


In a pie dish or quiche dish, place 1 tbsp butter and allow to melt in oven while it pre heats to 375°. Once melted spread butter all around platter and up the sides. Once done, lay spinach on bottom. In a separate bowl, whisk eggs, heavy cream and spices. Fold in cheese to egg mixture. Pour half of egg mixture evenly over spinach. Then layer zucchini, onions and then bell pepper. Pour remaining egg mixture over top. Add more pepper flakes if desired. Place in oven on a baking sheet for 50 mins at 375° or until center is cooked.  Serve hot! 

Makes 6 servings 

Macros per serving: cal 240, 19g fat, 14g protein, 2 net carbs
