Salmon Cobb Salad with Cilantro Lime Dressing

Ingredients and Directions:

Avocado cilantro lime Dressing (Makes 8 servings - 2 tbsp per serving) -

1/2 cup mayo 

1 avocado

1/4 cup cilantro 

1 jalapeño 

3 tbsp lime juice

1/2 tsp garlic powder 

Salt to taste

Add all ingredients to food processor and blend until well-combined. Set aside. 

Salad -

4oz skinless salmon 

1 1/2 olive oil

1/4 tsp garlic powder

5 oz shredded iceberg lettuce 

5 cherry tomatoes, sliced

1/4 avocado 

2 strips bacon

1 hard boiled egg, chopped

1 oz blue cheese

Pepper to taste

Season salmon with salt, garlic powder. In 1 1/2 tbsp olive oil, cook salmon. Once cooked, chop into bite-sized pieces. 

Assemble salad and serve with 3 tbsp of dressing.

Macros per salad: 941 cal, 79g fat, 47g protein, 10g net carbs
