Pumpkin Spice Cream Cheese Bread

 

Ingredients and Directions:


Pumpkin bread:

½ cup coconut flour

2 tbsp oat fiber (or more coconut flour)

1 tbsp pumpkin pie spice

1 cup pumpkin puree  

2 tsp vanilla extract

1 tsp Mapleine extract

1 cup golden monkfruit or golden granulated sweetener of choice

1 packet or 1 scoop of TeamKeto Salted Caramel Meal Replacement

1 tsp baking soda

¼ tsp salt

2 tsp cream of tartar

4 eggs separated

1 egg white

5/8 cup melted unsalted butter (1/2 cup + 1/8 cup)


Cream Cheese Swirl:

4 oz cream cheese

2 tbsp powdered sweetener

1 tbsp heavy whipping cream


Preheat oven 350. In a bowl mix coconut flour, oat fiber, protein powder, salt, baking soda, and sweetener. Then add in egg yolks, butter, vanilla extract, Mapleine extract and pumpkin. Mix until well-combined.


In a separate bowl, add in the 5 egg whites and cream of tartar.  Beat with a hand mixer until stiff peeks form. Gently fold into pumpkin batter. Pour into a 9x13 parchment-lined baking pan. Evenly spread out.


In another bowl, mix cream cheese, powdered sugar and heavy whipping cream. Using a hand mixer, mix until well-combined. Dollop over top of bread batter and using a chop stick/knife or tooth pick and swirl cream cheese mixture. Bake at 350 for 32-35 minutes. Allow to cool before slicing.
