Pumpkin Spice Chocolate Chip Cookie
Ingredients and Directions:
1 ½ cups almond flour
¼ cup oat fiber (or coconut flour)
¼ tsp salt
½ tsp baking powder
½ cup granulated sweetener
1 large egg yolk
½ cup pumpkin puree
1 tsp pumpkin pie spice
½ tsp baking powder
1 tsp Mapleine extract
2 tsp vanilla extract
3/4 cup Lily's pumpkin spice chocolate chips
Optional: 1 scoop TeamKeto unflavored C8 powder (not calculated)
In a bowl, mix all dry ingredients (reserve chocolate chips for the end), then add in all wet ingredients and mix until well-combined. Pour in ½ cup chocolate chips and fold in. if you find cookie dough to be to sticky, place in fridge for 30 mins. Using small scooper (2 tbsp) make 26 cookies and place on parchment-lined baking sheet. Flatten to about ½ inch as it will not spread on own. Top each cookie with remaining chocolate chips. Bake at 350 for 20-22 mins until golden brown. Allow to cool completely or they will crumble.
