Lemon Blueberry Mug Cake

Ingredients and Directions:

1 scoop (or packet) of TeamKeto Vanilla Meal Replacement 

1/2 tsp baking powder

1 egg

1/4 cup coconut flour 

1tbsp butter 

1/2 tsp baking soda

1/2 tsp lemon extract 

5 blueberries 


In a bowl, mix all ingredients except butter and blueberries until well-combined. Use half tbsp butter to melt inside bowl/mug or ramekin. Then pour batter into container, top with blueberries and microwave for 1 minute and 30 seconds. Once out, place the remaining 1/2 tbsp butter on top.


Topping:

1 1/2 tsp blueberry powder 

1/2 tbsp lemon juice 

1/4 cup powdered sweetener 

1 1/2 tbsp heavy whipping cream 


In a bowl, mix all ingredients until well-combined, pour icing over the mug cake and enjoy!

Macros per cake: cal 564, fat 48g, protein 20g, net carbs 9g
