Keto Tamale Masa Dough

 

Craving tamales but don't know how to eat them while on keto? Try this recipe for Tamale Masa Dough!

 

Ingredients: 

1 cup shredded cheddar cheese

1 cup shredded Monterrey jack

2 oz cream cheese

1/2 cup lard

2 1/2 cups almond flour

1 tbsp baking powder 

1/2 tsp garlic powder 

1/4 tsp cumin 

1/4 tsp pink Himalayan salt 

Optional- 1/4 tsp corn extract 


In a microwaveable bowl, add cheese and cream cheese, cover and place in microwave for 60 seconds, mix and if needed place back in microwave for another 30 seconds, add lard and mix. Once combined, add the rest of ingredients. Let sit for 30 minutes. Make 10 1 oz balls. 


Spread on corn husk like normal masa. Fill with your favorite filling. Place in steamer lined with extra corn husks. If needed, you can add a mug filled with boiling water in center to help keep up tamales so they do not fall.

Once you are done, cover top of tamales with corn husk and cover with a lid. You can also add foil over the top for added coverage. On low to medium heat, cook for 1 hour. Remove let sit for 5 minutes and serve with favorite Toppings. 

 

Makes 10 servings (2oz balls of dough)

Macros per serving: 409 cal, 35g fat, 16g protein, 3g net carbs
