Keto Mexican Wedding Cakes

Ingredients:

16 tbsp grass fed butter 

1/2 cup powdered monkfruit 

1 tsp vanilla extract 

2 cups almond flour (it's better to use fine almond flour)

1/2 cup chopped pecans

1/8 tsp salt

1 scoop TeamKeto vanilla c8 powder 


In a bowl, cream butter, powdered sugar, c8 powder and vanilla. Then add in almond flour, salt and pecans. Mix until well combined. 


Place cookie dough on wax paper and spread out to an even layer. Cover with another sheet of wax paper and let it chill 1-2 hours. 


Heat oven 325. Make 1 1/2 inch balls and place on parchment-lined baking sheet. Bake 20-25 minutes. 


Let them cool completely, then in a bowl add more powdered monkfruit and coat each cookie.

Makes 30, 1 1/2 inch cookies

Macros for one cookie: 110 cal, 11g fat, 2g protein, 1 net carb
