Keto Cheesecake Yogurt

Tastes just like the inside of a slice of cheesecake...Dessert for Breakfast!

 

Ingredients (for one serving)

2 oz Greek yogurt (56.7 grams)

1/20 package, small (3 oz) Cream cheese (2.4 grams)

13/16 tsp Stevia Sweetener (0.83 grams)

3/16 fruit (2" dia) Limes (11.2 grams)

1 1/3 large (1-3/8" dia) Strawberries (24 grams)

4 1/3 chips Milk Chocolate Style Baking Chips (2.3 grams)

1/2 tsp Vanilla extract (2.2 grams)

1/3 tbsp Water (4.9 grams)

 

Directions (for six servings)

1. Bring Cream cheese to room temperature. Place cream cheese into a large mixing bowl and begin beating on medium speed with electric beaters or Kitchenaid mixer (I recommend using the attachment that has the spatula side thing rather than whisk.) Beat cream cheese until smooth. Add in yogurt. Combine.

3. Squeeze lime juice into a cup and remove seeds. Add vanilla extract. Pour into yogurt mixture and combine. Next add in sweetener. You can add in more or less to desired sweetness. Keep mixing until yogurt gets a "shiny" finish.

5. Add more or less water to get desired consistency. I generally will add about 2 tbsp as I like my yogurt to be a tad thicker. Top with 2 strawberries sliced and about 8-10 chocolate chips.
Makes about 5-6 servings. 1 serving is 1/2 cup of yogurt with toppings.
