A perfect salad to eat as a meal or pair with some keto pasta!
1 tbsp Avocado oil (14 grams)
4 oz raw Boneless Skinless Chicken Thighs (113 grams)
1/4 tsp Garlic powder (0.78 grams)
1/4 tsp Italian Seasoning (1 grams)
3 oz Spring Mix (85 grams)
1/3 cup, chopped or sliced Tomatoes (60 grams)
3 strip cooked Bacon (24 grams)
3 tbsp Hemp Hearts (30 grams)
2 tbsp Jessica's Caesar (see below)
1. Drizzle avocado oil in a skillet, add chicken thighs toss until well coated, season with salt and pepper, garlic powder and Italian seasoning. Cook for about 8-10 minutes, until chicken is cooked through. Layer salad mix with tomatoes, chicken thighs, and bacon in large bowl and sprinkle with hemp hearts.
Drizzle caesar dressing and enjoy.
2. JESSICA's CAESAR RECIPE:
▪ 1 egg yolk
▪ 2 tbsp dijon mustard
▪ 1 tbsp anchovies paste
▪ 2 tbsp fresh lemon juice
▪ 2 cloves garlic
▪ 1 tbsp oregano
▪ 1 tsp salt
▪ 1 tsp black pepper
▪ 1/2 cup olive oil
▪ 1/2 cup parmesan, shredded
In a food processor add all ingredients except olive oil, pulse for 30 seconds until blended together. Add olive oil in a slow stream while pulsing. Dressing will be thick. Add in parmesan and blend for another 20 seconds. For a thinner dressing, add more olive oil.
