Ingredients and Directions:
6 eggs boiled
1/4 cup chorizo, cooked
1/4 cup mayo
1 lime juiced
1/4 cup cilantro
1 tbsp fresh jalapeño
1/4 tsp garlic powdered
Salt and pepper to taste
I find that the perfect boiled egg is started in cold water to boil for 20 mins. Place in cold ice bath to stop the cooking. Once cooled, peel eggs, slice eggs in half, and take out egg yolks.
In a food processor place egg yolks and all ingredients. Pulse until well-combined.
You can use a spoon or a piping bag and fill each egg evenly. Place chorizo over the tops of each egg about 1/2 tsp or 1 tsp.6 servings
