1 cup whole milk Ricotta
1/2 cup heavy whipping cream
1 scoop TeamKeto Vanilla c8
6 tbsp coconut flour
1 tsp baking powder
2 tbsp butter (for cooking)
In a bowl / blender or food processor, whichever makes it easier for you, mix all ingredients together until well-combined. Heat a pancake griddle and grease with 1/2 tbsp butter. Using an ice cream scooper (size 3 tbsp) or a tbsp (3 tbsp worth of batter), scoop the batter into the pan. They cannot be bigger than 3 tbsp or you'll have issues flipping them. Cook each side 2 1/2 minutes.
Serve hot with favorite Toppings. Enjoy!
