Keto-fied Antipasto Salad

 

Ingredients and Directions:

Italian dressing:

1/2 cup olive oil

1/8 cup red wine vinegar 

3 tbsp lemon juice 

1 tsp Italian seasoning 

1/2 tsp pepper 

1 clove garlic minced 

1/2 tsp salt


In a small mixing bowl or mason jar, add all ingredients and mix until well-combined. Set aside.


Salad:

12 oz chopped romaine lettuce 

6 oz uncured nitrate-free Pepperoni or salami, chopped

1 small red onion, thinly chopped

10 oz cherry tomatoes, halved

8 oz crumbled feta

4 oz pitted Kalamata olives, halved 

8 oz fresh mini mozzarella balls

8 oz quartered artichoke hearts, chopped

1/4 cup shredded parmesan

In a large bowl, add all salad ingredients. Pour all of dressing on salad and mix until all is fully coated. 

12 servings (serving size: 1 1/2 cups)

Macros per serving: 314 cal, 26g fat, 15g protein, 4g net carbs
