8 tbsp butter, softened
1/4 cup golden monkfruit
1/4 cup powdered monkfruit
1 egg, room temp
1/2 tsp almond extract
1 cup almond flour
3 tbsp coconut flour
1 scoop TeamKeto Vanilla c8
1 cup shredded coconut
1/2 cup slivered almonds or sliced almonds
1 tsp baking powder
1/2 tsp xantham gum
1/4 tsp salt
Optional: sliced almonds for the top.
In a bowl, cream butter and sweetener until fluffy. Then add egg and extract. Mix until well-combined. Add dry ingredients and mix until well-combined. Using a 4 tsp ice cream scoop, scoop out 26 cookies to a parchment-lined baking sheet. Flatten cookies (optional place on sliced almond in center of cookies) and bake at 325° 10-12 minutes or until lightly golden.
Allow to cool completely. Enjoy!
