Ingredients and Directions:
-1/2 cup natural peanut butter (we used Laura Scdders natural peanut butter)
-8 tbsp butter
-1/2 cup brown monkfruit
-1 scoop TeamKeto Unflavored C8
-2 tsp baking powder
-1/4 tsp salt
-1/2 tsp vanilla
-3 large eggs whisked
-1/3 Lily's dark chocolate chips
In a microwaveable bowl, add peanut butter and butter. Microwave until butter is softened (start with 15 seconds) and mix until well-combined. Add in monkfruit, mix. Then add c8, meal replacement, salt and baking soda. Mix until well-combined. Whisk eggs and vanilla then add into bowl, mix. Finally, add in 3/4 of the chocolate chips. Mix until well-combined.
Scoop 3 tbsp of batter into each cupcake space (silicone or paper-lined tin), once done add the remaining chocolate chips to the tops of each muffin. Place in oven 20-25 mins. Bake until golden brown.
