Chicken and Waffles

For keto fried chicken :

4 4oz chicken thighs

1 large egg, whisked

1 1/2 cups pork rind crumbs

1/2 tsp garlic powder (optional)

Salt to preference 

1/4 cup avocado oil


In a pan, heat oil on medium heat. While it warms up, in a bowl add egg and whisk. In another bowl add the pork rind crumbs, dip chicken thighs individually in egg and then in pork rind crumbs. You can do 1 at a time to keep the crisp of the pork rind. Fry each piece until golden brown and cooked through. Allow to sit on a wire rack.

On a plate place 1 mini waffle, 1 tbsp of butter, 1 chicken thigh, and top with 2 tbsp keto maple syrup (we use ChocZero Maple Syrup).

Makes 4 servings 

Macros per serving: 750 calories, 60g fat, 37g protein, 5 net carbs

Serve hot and enjoy!
