Italian Frittata

Ingredients and Directions:

1/2 red bell pepper, chopped

1/2 yellow onion, diced

3 cloves garlic, minced

1/3 cup shredded Parmesan cheese

8 strips cooked bacon

2 tbsp butter, melted

1 tbsp bacon fat (you can sub butter if you would like)

1 tsp Italian seasoning 

1/4 tsp salt 

1/2 tsp pepper

8 eggs, whisked

1/4 cup heavy whipping cream 


Preheat oven 350°. You can use a skillet or quiche dish to make the Frittata. I used a quiche dish.

In a pan, sauté onions and red bell pepper in 1 tbsp of bacon fat. Once the onions start to become translucent, add in garlic and cook until fragrant. Take off heat. If you are using the skillet, do the remaining steps in the pan. If you use the dish then add the onions/peppers and garlic along with the bacon fat to the dish. Add the 1 tbsp butter of melted butter and make sure it gets evenly distributed. In a bowl whisk 8 eggs along with the heavy whipping cream, Italian seasoning, salt and pepper. Pour over sautéd onions and peppers. Crumble bacon over top and top with the Parmesan cheese. Baked for 32-35 mins at 350°. Enjoy!
