Gingerbread Waffles

Ingredients and Directions:

Waffles-
2 tbsp almond flour
2 tbsp powdered monkfruit
1/2 tsp baking powder
1tbsp oat fiber
1/2 tsp cinnamon
1/2 tsp ginger (ground)
1/8 tsp Allspice
1 egg room temp
1 oz cream cheese, room temp
1 tbsp brewed coffee
In a bowl, mix cream cheese and powdered monkfruit. Whisk in egg then coffee until well-combined. Add in all dry ingredients. Using a mini waffle maker, use about 1/4 cup of batter per waffle. Makes 4.
Icing-
2 tbsp powdered monkfruit
About 1/2 tbsp water (or until it is your desired consistency)

Drizzle Icing over top and enjoy!
